Healthy pancakes that are PERFECT for Pancake Tuesday

There's a tasty pancake for everyone in the family

Our favourite day of the year is finally here; Pancake Tuesday!

It is the one day where you can have the most coveted breakfast dish for breakfast, lunch and dinner.

While most of us will go mad and add butter, sugar and toppings liberally to our cakes, others may want to experiment with healthier versions of the humble pancake.

So, we’ve collected 5 recipes that are healthy and extremely delicious, so everyone is the family will enjoy them.

1. Protein Pancakes

For simple protein pancakes all you need is; 1/4 cup of oats, 1/4 cup of cottage cheese, 1/2 a scoop of protein and 1/2 a cup of egg whites.

Mix all the ingredients together, heat up a pan with some coconut oil and get frying.

Top with vanilla yoghurt and maple syrup for a protein packed feast.

2. Peanut Butter Pancakes

This is a great family breakfast recipe as it makes up to 16 pancakes.

Mix 1 cup of smooth peanut butter, 4 large eggs, 1/4 tsp of baking powder, 1/4 tsp of salt, 2 tbsp of maple syrup, a drop of vanilla extract, and 1/4 cup of full fat yoghurt.

Fry off the pancakes with some coconut oil, we like to add some chocolate chips for extra fun.

3. Banana Pancakes

Banana pancakes are the avocado toast of the pancake world; they’re trendy, healthy and super easy to make.

Blend 2 eggs and one whole banana until a smooth mixture is formed. Add in a handful of oats and/or an 1/8 tsp of baking powder for really fluffy pancakes.

When frying this mixture, let it fully brown on one side before flipping as it is quite delicate.

We love melting frozen berries and some orange juice to create a sauce; it tastes incredible with a dollop of yoghurt and maple syrup.

4. White Chocolate and Macadamia Nut Pancakes

This is a decadent yet healthy pancake which will definitely become a weekend staple.

To make 7 pancakes you will need; 1 cup of flour, 1tbsp sugar, 1 tbsp baking powder, pinch of salt, 1 cup of light milk, 1 1/2 tbsp vegetable oil, 4 tbsp white chocolate chips, and 3 tbsp chopped macadamia nuts.

If you want to make these pancakes vegan, sub out the dairy items for dairy-free products and it will taste exactly the same.

5. Vegan Pancakes

For the fluffiest vegan pancakes you will need; 1 cup of flour, 2 tbsp of sugar, 1 tbsp baking powder, 1/2 tsp of salt, 1 cup dairy-free milk, 1tbsp of apple cider vinegar, 1 tsp of vanilla extract.

Mix the dry ingredients in a bowl separately, combine the milk, apple cider vinegar and vanilla extract and let it sit for 10 minutes.

Combine the wet and dry ingredients, whisk until the batter is smooth, and rest it for a further 5 minutes. Drop 1/2 a cup of the mixture into a hot, oiled pan. Fry until bubbles form and it is brown underneath, then flip.

These pancakes are stunning topped with lots of fresh fruit and maple syrup.
