Roz Purcell developed under-active thyroid from eating bowls of broccoli for breakfast

Model Roz Purcell has revealed she used to eat a bowl of broccoli for breakfast when living in the US.

The ex-Miss Universe Ireland believed that the greens were healthy during her time spent in the Big Apple – but ended up developing an under-active thyroid because of her inconsistent diet.

And Roz, who lived there when she was 18 after being signed by Donald Trump’s agency, admits it wasn’t the easiest time in her life.

She said: “When I was modelling in New York it was quite tough. Obviously I’m from a country background so there was a very wholesome up- bringing of ‘always finish your food’ and all that.

“I had no idea about nutrition. I would get up and go for a run in the morning and come back, and my idea of eating healthy was having a bowl of broccoli for breakfast.”

However Roz, 24, soon discovered that eating broccoli followed by acting “disgracefully” on the weekends made her quite sick, and she developed an under-active thyroid.

She said: “I got quite sick. My metabolism just shut down from having no sustainable or regular eating patterns.”

And Roz told the Saturday Night Show that after being prescribed medication, she researched the benefits of good nutrition and started a change in her life.

She added: “Within six months I had cured myself. I ate no processed foods, had regular meal patterns and began training for shorter intervals.”

Her nutrition skills have stuck with her, helping in her new cooking career which has also bagged Roz a publishing deal.
